Dong Ding is an oolong tea named after a high mountain in Nantaou County Taiwan. Dong Ding means "Icy Peak" in Taiwanese, and the tea cultivars to make the Dong Ding Oolong are Qinqxin Oolong and Ruanzhi Oolong. It's generally considered that oolong tea made from Qinqxin Oolong is of higher quality than the Ruanzhi Oolong cultivar.
Dong Ding Oolong is classified into three types by fermentation extent , Light fermentation (around 20%), Intermediate fermentation (around 40%) and Heavy fermentation (around 70%). The light one has floral notes, close to green tea. The intermediate one gives strong fruity notes, and the heavy one has deep honey notes close to a black tea.
Dong Ding Oolong as a tea style includes the whole tea leaf, unlike the Chinese Tie Guan Yin. This tea is tightly rolled into a dragonfly head shape which locks in the smooth flavor its floral, and honey notes. ⠀
Brewing:
Tea: 5 grams per 8 ounces of water
Water temperature: 194°F - 90°C
Infusion length: 1-2 minutes. May be infused 3-5 additional times.
